Cowboy Queso Recipe

Cowboy Queso
Servings: 8 cups

1 lb ground beef
1 Tbsp dried onion flakes
1 (15oz) can chili beans, undrained
1 (15oz) can black beans, rinsed and drained
1 (10oz) can Rotel tomatoes, undrained
1 cup frozen corn, thawed
1/2 cup milk
1 Tbsp chili powder
1/2 tsp oregano
1/2 tsp hot sauce
1/4 tsp garlic powder
1/4 tsp cumin
16 oz Velveeta, cubed

Microwave Directions:
In a large skillet, cook ground beef until no longer pink. Drain fat.

Place beef in a large microwave safe bowl. Add remaining ingredients, stir. Microwave on HIGH for 4 minutes, stir. Microwave on HIGH for an additional 4 minutes, stir. Continue microwaving in 1 to 2 minute intervals until cheese is melted and dip is thoroughly heated. Serve immediately.

Slow Cooker Directions:
In a large skillet, cook ground beef until no longer pink. Drain fat.

Place cooked beef in slow cooker. Add remaining ingredients and stir. Cook on LOW for 2 or 3 hours, until cheese is melted. Serve with chips.

BBQ wings

Servings: 12

12-16 chicken wings
1 can Coke
1 Cup BBQ Sauce (we use Sweet Baby Ray’s)

Add all ingredients to a slow cooker and simmer for 4-6 hours. Serve hot.

Meatball sliders

Meatball Sliders
Servings: 32 sliders

1 bag frozen Italian Style meatballs (32 meatballs)
1 jar (28oz) pasta sauce
1 pkg. Hawaiian buns (small)
11 slices mozzarella cheese, each slice cut into thirds

Preheat oven to 375⁰ F.

Simmer meatballs and sauce over low heat until warmed through (5-10 minutes).  Separate buns.  Place 1/3 slice of mozzarella cheese on top of bun, top with meatball and replace top of the bun.  Place slider on baking sheet.  Repeat with remaining buns.

Bake at 375⁰ F for 18-20 minutes, or until golden brown.

Smoky Cheese Ball

Smoky Cheese Ball
Servings: 6-8

1 (8-oz.) package cream cheese
1/2 pound grated cheddar cheese
1/2 tsp liquid smoke flavoring
1 tsp Worcestershire sauce
1/2 tsp onion salt
1/8 tsp garlic salt

Mix all ingredients with a mixer or food processor. Shape in to ball and roll in chopped nuts. Cover and store in refrigerator. Allow to soften a bit at room temp before serving. Serve with your favorite crackers.

Grilled Jalapeno Poppers

Grilled Jalapeno Poppers!
Servings: 12

6 whole jalapeno peppers
6 oz cream cheese (block)
1 green onion finely minced
1/2 tsp garlic powder
1.5 oz shredded sharp cheddar cheese
12 slices bacon

Cut the stem off each jalapeno and cut in half lengthwise. Using a small spoon, scrape out seeds & insides.

In a small bowl combine cream cheese, green onion, garlic powder and cheddar cheese. Divide into 12 equal pieces and stuff into the jalapeno halves.

Wrap each jalapeno completely with bacon ensuring the cheese is covered. Secure with toothpicks.

Place jalapenos on grill cut side down and grill just until bacon begins to crisp (about 6 minutes). Gently loosen bacon from the grill and flip jalapenos over. Reduce heat to medium-low and cook an additional 10-12 minutes or until bacon is cooked and cheese is melted.
